The Karak Coffee Latte

Filling station karak. Made with real coffee.

Dubai runs on karak: strong tea boiled with cardamom and saffron, sweetened, and finished with evaporated milk until it turns caramel brown. Here it goes over a double shot of our house blend. Spiced, creamy and twice as awake.

1Glass
Cru No. 1The coffee

You need

  • Double espresso of Cru No. 118g coffee, or a strong moka or AeroPress
  • Water150ml
  • Loose black tea1 tsp
  • Green cardamom3 pods
  • Saffrona pinch, about 8 threads
  • Evaporated milk150ml
  • Sugar2 tsp, or to taste

Method

  1. Lightly crush the cardamom pods. Put them in a small pan with the water, tea and saffron and bring to the boil, then keep it at a steady boil for 3 minutes. It is ready when the water has turned a deep red-brown and smells of tea and spice.
  2. Pour in the evaporated milk and stir in the sugar. Simmer for 2 to 3 minutes over a medium heat, watching closely. The karak is ready when it rises to the edge of the pan and turns a rich caramel brown. Lower the heat as it rises so it does not boil over.
  3. Strain the karak through a fine sieve into a jug, pressing on the tea leaves to get every drop.
  4. Pull a double espresso of Cru No. 1 into a small glass: 18g of coffee to about 36g in the glass, in 25 to 30 seconds.
  5. Pour the hot karak slowly over the espresso and serve straight away.
From the house. Cru No. 1 brings dark cocoa, toasted walnut and brown sugar, a base deep enough to stand up to strong tea, cardamom and saffron.

Cru No. 1,
our maison blend

Dark cocoa. Toasted walnut. Brown sugar. A spicy finish. Composed for Parcelle and for no one else, it has the body to hold its own under karak, right to the bottom of the glass.
